Courtney’s Famous Dill Pickle Pasta Salad

My brother is getting married September 14! And while I am so excited to get a new sister ; I am almost just as excited to have her Dill Pickle Pasta Salad for a lifetime haha.

You have seen this featured at almost every family BBQ we have. And now I get to share the recipe with you :) This is SOOOOOO DARN GOOD!

PREP TIME: 5 mins

COOK TIME: 15 mins

TOTAL TIME: 20 mins

INGREDIENTS:

3 Cups dry shell pasta (you can use any pasta you prefer!)

3/4 Cup of dill pickles sliced

2/3 Cup of cheddar cheese diced

3 Tablespoons of white onion finely diced

2 Tablespoons of fresh dill

1/2 Cup of pickle juice (this is the BEST)

DRESSING

2/3 Cup of mayonnaise * Can substitute cottage cheese here for a bit more protein!

1/3 Cup of sour cream

1/8 Teaspoon of cayenne pepper ( Optional - especially if you have kids haha)

4 Tablespoons of pickle juice

Salt & Pepper to taste

METHOD:

  1. Boil the pasta according to the box. Run under cold water once its cooked.

  2. Toss the cold pasta with about 1/2cup of pickle juice and set aside for about 5 minutes. Drain and discard the pickle juice.

  3. Mix all of the dressing ingredients in a small bowl and mix well.

  4. Toss all the ingredients in a large bowl and put it in the fridge for at least an hour before you serve it!

  5. ENJOY!!
