Lactation Cookies (Safe For Everyone!)
One of my fav gifts to give a new mom is a batch of homemade lactation cookies. I've often shared when I'm making them on my Insta-stories and I always get tons of requests for the recipe! So as promised- here is the recipe for these magical (and delicious) cookies! The secret lies in the Brewers yeast and the oats.
If you're wondering WHAT the heck a lactation cookie is; it's a cookie that promotes breast milk for breastfeeding moms!
*Now I should warn you that these have worked for myself and many of my friends but one person did tell me they didn't work for them. So while everything is always worth a try, these may not be a cure all! Also , if your husband / boyfriend / child / relative / neighbour eats them that's ok too they won't go into spontaneous lactation haha*
INGREDIENTS:
1/2 cup butter
3/4 cup brown sugar
2 tablespoons flaxseed meal (get this at bulk barn!)
2-3 tablespoons of water (depends on how moist you prefer the cookies to be)
1 egg
1 tablespoon vanilla extract
1 cup flour
1/2 teaspoon baking powder
1 teaspoon cinnamon
1-2 tablespoons of brewers yeast (MUST be brewers yeast – do not substitute with bakers yeast or any other yeast) (you can get this at Bulk Barn too!)
1/2 teaspoon salt
1 & 1/2 cups oats – steel cut oats
1/2 cup of chocolate chips!
DIRECTIONS:
In a large mixing bowl, cream the butter and sugar, then add the egg and vanilla. Mix well.
In a separate bowl, combine the flaxseed and water, let them sit for a few minutes before adding to mix.
Add the dry ingredients to the mix (apart from the oats chocolate chips) and mix well again.
Stir in the oats and choc chips.
Using a dessert spoon, scoop the mixture into your hand and roll it into a ball.
Place the cookies onto a lightly greased or lined baking tray.
Flatten them a little with your fingers or a spatula.
If you like a soft centre, don’t squash them down too much.
Bake the lactation cookies @ 350F for around 10-12 minutes, depending on how well cooked or crunchy you like your biscuits. Eat 3-4 a day! (or more haha)
